Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 large Onion, chopped
  • 2 medium Carrots, sliced
  • 2 medium Potatoes, diced
  • 1 block Japanese curry roux
  • 3 cups Water

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the sliced carrots and diced potatoes, and cook for a few minutes.
  4. Pour in the water and bring to a boil. Reduce heat and simmer until vegetables are tender.
  5. Add the Japanese curry roux and stir until dissolved and thickened.
  6. Serve hot with steamed rice.
