Ingredients 

Main Ingredients

  • 1 cup glutinous rice flour
  • cup water
  • ¼ cup sugar
  • ½ cup red bean paste
  • as needed potato starch for dusting

Instructions 

  1. 1. In a mixing bowl, combine glutinous rice flour, water, and sugar. Mix well until smooth.
  2. 2. Cover the bowl with plastic wrap and microwave for 2 minutes. Stir the mixture and microwave for another 1-2 minutes until the dough becomes thick and slightly translucent.
  3. 3. Dust a clean surface with potato starch. Transfer the dough onto the surface and let it cool slightly.
  4. 4. Divide the dough into 8 equal pieces. Flatten each piece and place a small amount of red bean paste in the center. Wrap the dough around the filling and pinch the edges to seal.
  5. 5. Dust the finished daifuku with more potato starch to prevent sticking. Serve and enjoy!
