Instructions
1. Rinse the sushi rice under cold water until the water runs clear.
2. Cook the rice in a rice cooker with the appropriate amount of water.
3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.
4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
5. Slice the fish into thin pieces about 2-3 inches long.
6. Wet your hands with water and shape small amounts of rice into oval shapes.
7. Place a small amount of wasabi on each piece of fish and then press the fish onto the rice shapes.
8. Serve immediately with soy sauce, pickled ginger, and additional wasabi if desired.
