Vegetarian Japanese Noodle Soup

Main Ingredients
- 200 g soba noodles
- 1 l vegetable broth
- 1 carrot, julienned
- 1 zucchini, julienned
- 100 g shiitake mushrooms, sliced
- 2 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 stalks green onions, chopped
- 1 handful baby spinach
- 1. Cook soba noodles according to package instructions. Drain and set aside. 
- 2. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute. 
- 3. Add vegetable broth, soy sauce, carrots, zucchini, and mushrooms. Bring to a boil, then reduce heat and simmer for 10 minutes. 
- 4. Add cooked soba noodles and baby spinach to the pot. Cook for another 2-3 minutes until spinach is wilted. 
- 5. Serve hot, garnished with chopped green onions.
