Ingredients 

Main Ingredients

  • 200 g soba noodles
  • 1 l vegetable broth
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • 100 g shiitake mushrooms, sliced
  • 2 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 stalks green onions, chopped
  • 1 handful baby spinach

Instructions 

  1. 1. Cook soba noodles according to package instructions. Drain and set aside.
  2. 2. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  3. 3. Add vegetable broth, soy sauce, carrots, zucchini, and mushrooms. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. 4. Add cooked soba noodles and baby spinach to the pot. Cook for another 2-3 minutes until spinach is wilted.
  5. 5. Serve hot, garnished with chopped green onions.
